Try to think of smoking woods as living on a spectrum from mild-to-strong. On the mild side are fruit woods, like Pear, Plum, Apple, Peach and Cherry which might pass on that sweetness your mates swear by, but in actual fact they are subtle enough to use with lighter meats such as poultry or fish, and sometimes pork.
